Cut up a pound of venison steak into thin strips. Mix some flour with whatever other spices you wish into a large zip top bag or bowl. Salt and pepper to meat. Place into bag/bowl and coat meat with flour mixture. Brown venison in olive oil in cast iron pan. Remove from pan and set aside. Add about 1 cup of beer or beef broth to pan to deglaze (scrape the yummy bits) add 1/2 onion, 2 cloves of garlic, about 1 1/2 cups of mushrooms and saute until the onion is translucent. Add the venison back in. Add beef broth to cover the meat. cover the pan and simmer on low for about an hour. The taste will be strong at this point...don't fret. Boil water and cook any pasta you like. When pasta is done, add about 3/4 cup sour cream to your meat pan. Stir that in and let it cook in for just couple min. Spoon Stroganoff over noodles, add parmesan cheese or not. Enjoy
